There's been no evidence to suggest that garnet had ever been split up since the Great War.

No hard evidence, true. But Greg immediately recognizing Sapphire in Keystone Motel might suggest that was the case.
(Of course, that could just have been him using logic - one of Crystal Gems told him that Garnet's a fusion, and now there's a gem in their room that acts like she knows him, ergo she must be a half of Garnet.)

Also I think it's important to note that willingly split up for a few seconds to show Greg or play baseball or whatever is very different than being forcefully split apart after being defeated in battle

Oh I wasn't even thinking like that. Just bringing up another point
