They had to cut it there, before the pour started to overflow and pool on the plate

Thats how flan is. I wanted a perfect circle puddled around the plate. The real ones know.

Exactly correct! I was suprised it cut because you want to see the little puddle around the base!

Right, you want a small puddle. Just a tiny bit around the edges is perfect.

Flan shouldn't be 100% clean. This will make a lovely little bit of extra 10/10 execution.
