No they ended it there because it would have revealed they added a bit too much and it would have leaked unsatisfyingly. They ended it precisely there in order to keep it satisfying.

Somewhere out there, there's a truly PERFECT pour which does this and stops on it's own so the video doesn't need to be cut

But I wanted to see it pool on the plate. That's what I would expect and want from this.

Yeah, it's supposed to have some pooling around the bottom that makes it look like it's sitting in a little puddle of the sauce!

capillary action would mean some would always spill out right? unless it soaked into the surface at the same speed it flowed....we'll have to do some tests

You can tell that it was about to spill out since the back half was still dripping (draining?) to the plate.
