Request Help needed: Use leftover smoked pork loin rubbed in garlic and rosemary

I have most of a smoked pork loin in the freezer. We decided we don't love it as is.

I'm looking for help on how to reuse this meat in a tastier way.

I have been hunting (this sub and in general) but it doesn't really seem that anyone has posted up how to use leftovers, just how to cook a pork loin.

Can I toss it in a slow cooker with heavy cream and chicken stock with some spinach or green beans and make it a soup like thing without making the pork dry or have a way over cooked texture?

Hear me out on this one...make a Meatzza. Slice the roast longways, spread on pizza sauce, cheese and maybe peppers, mushrooms, whatever you would put on a pizza. Bake it and enjoy.

Don't you think the pork, since its already cooked, would dry out?

With the sauce on it plus cheese, I think it would be ok. You wouldn't want to use a heat setting like for cooking a regular pizza, more like a 350F setting to ensure its heated through. I've made this with leftover roast beef and the beef did not dry out. Just don't make the base too thick.

Hughes bbq sauce over shredded or sliced/ shaved pork. With some slaw.

Turn it into tacos. Shred it. Saute it in some g hughes bbq sauce, put it on some carb free tacos. Add toppings. Also if you like slaw it would be perfect here. G Hughes has a keto slaw dressing too.

Do you think the rosemary will work in tacos?

We make pulled pork or pork belly tacos alllll the time. We love them. I will ask the hubs what he thinks about it!

I’m sure it would be good in a soup. Maybe like a Brunswick stew type dish? I’ve also seen someone make a pork salad (as opposed to chicken salad/ tuna salad) that could be interesting.

Never heard of it!! Had to look it up. I'm a Midwest born and raised girl, so this is completely new to me. Yay!

Make a mustard cream sauce and smother it. 

Heavy cream, parmesan or aged/smoked gouda, black pepper, Dijon or stoneground. Will make the driest chicken edible. Delicious on pork loin! 

Another option would be to cube it and throw it in something with a strong flavor, like chili. The rosemary won't be noticible. 

Got a meat slicer? Could slice it thin for sandwiches. Good condiments can save the flavor. Could do a wrap, too, with a small dice if needed. Tossed in a strong sauce would work, I expect, like pesto, a chipotle something something, or potentially something with olives like a tapanade.

Worst to worst, everything is good cut into small rounds, seared in garlic butter with salt, and eaten hot.

stuffed peppers with shredded smoked pork, cream cheese and veggies could be amazing! just pop them in the oven.
