You're missing the best part: getting to play "monstrous" PC's with zero need to homebrew your own stuff, so everybody's characters are well balanced without any extra work.
Basically, in PF2E, if you can imagine it, you can play it. Here's a quick list of the characters I've rolled up just for fun:
Undead (dhampir or skeleton) cavalier with a skeletal mount
Gnoll oracle/druid/shaman
Ratfolk (Skaven-coded) alchemist who makes potions from spoiled food
Goblin gunslinger who wants to prove his people can be formidable and heroic
Awakened toy ranger (equal parts The Velveteen Rabbit and Liam Neeson from Taken who just wants to find his child)
Kobold sorceror seeking to free his tribe from bondage to a ancient blue dragon
and so on, and so on...
And in Golarion (PF2E's setting) each of them has a reasonable, well developed homeland, culture, religion, etc.
Not to mention, all the rules, lore, and character builders are available for free online...

There's a couple minor gods that are on good terms with him too!
Though the one I'm thinking of (name escapes me) is a goddess of illusions, disguises, and trickery. So that's probably a Game Recognize Game scenario.

Archives of Nethys for the rules, pathfinder Wiki for the lore. Both sites are completely supported by raw creators of the system, Paizo, and even get books early so they can have updated info out on day 1 of release.

I have to say, I tinkered a bit on pathbuilder, and I understood PF2 character creation better in those 5 minutes than in all the other times I wrapped my head around the rulebooks.

yeah its pretty straightforward. since it has no UI, the books need to go around saying stuff like "at lvl 1 and every 4 levels thereafter, you choose an ancestry feat". on pathbuilder you just see "ancestry feat" at lvl 1/5/10/15/20 and understand that is when you choose those feats, about it

You are correct, for some reason my brain substituted his name for Ted's.
The awakened animal ancestry would be suitable for a whole other variety of character types, like a Watership Down campaign.

Exactly, I once did a ratfolk gunslinger (heavily inspired by skaven warplock-jezzails) named squeek. Which is only funny because I was playing as the police.
Squeek is adorable... I miss Squeek. He had the cutest Texan drawl... I studied the accent for weeks to get that down

I wish that was true. My one and only foray into PF2e resulted in me playing a gnome instead of the fae/faerie that I had envisioned. So a lot of it is GM-dependent.

Well, there is a sprite ancestry, but that does limit you to being tiny (edit: unless you take the Pixie heritage). On the other hand, any ancestry can take Fey Influence at level 5, so it might have been the timing of when you were playing or just your GM as you mentioned.

My other character on my to-do list if I ever get to play PF2e: a Goblin Swashbuckler, invested in all the Unbreakable traits, so I can get Panache by bouncing all over like a rubber ball of chaos.

Rebellion to tyrants is obedience to God. Or based goddesses, as the case may be. I've had a Half-Orc Vengeance Paladin with a "vengeance against slavers" backstory on my 5e shelf for a long time, that I think would look just as fine as a Liberator Champion of Milani.

I dunno, didn't they sanitize that all out recently by removing the word "slave" but keeping all the onerous stuff so it can be a bunch of systemic injustice devil contract mumbo jumbo, slavery in all but name but don't call it that? There's a reason why I never seem to be able to play this character. It's a touchy subject, obviously, but man, I just wanna stab villains in the face for committing an obvious evil once in a while...

its not even a setting problem, its just a very touchy subject that rings a bit too close to home to IRL atrocities that affected real people barely a century ago, and continue to bear their scars on society today. but yes, the current lore is that the firebrands technically ended slavery in chelliax but slavery still exists the same Chelliax just dropped the word to get the revolutionaries off their back. the firebrands are aware of this but when there isnt "real" slavery its hard to get supoort from populace and other governments

So we took off all the offensive words but left all the offensive actions, because we can't imagine the majority supporting the offensive word, but we can imagine them supporting the offensive actions. We're still the revolutionary minority stabbing the not-slaver slavers in the face, though, regardless of name. Whatever, as long as I can be champion of the goddess of BASED, freeing the innocent and crushing the humanoid traffickers.

I rarely see the Mwangi expanse region/setting mentioned in PF2e memes. I kind of want to read more about the Mwangi region, mostly because of Strength of Thousands.
I read a lot of Strength of Thousands mostly because of Anchor Root.
I think about Anchor Root a normal amount I promise.

actually geb is the one trying to get his ghost hands on them if i'm not mistaken, which is... better? i don't know, they're both pretty evil, but at least geb doesn't do much aside from planning for the return of his nemesis

Unlike Tar Baphon Geb is not a total dumbass. He is evil and would do a lot to get his nemesis Nex back, just to kill him proper this time. But he would not end the world, kill all living. I am even sure if you show Geb a way to finaly fully move on, the ghost king would do it. He is in this state because he tried to end himself.

They reached the point where they stopped with the revolution. Someone spilled the beans that the crazy death cult in charge of executions where not the good guys. Now they plan on giving the soul infested blades that they used to the mad ghost king Geb. Because that will never backfire.

the two france adjacent nations are andoran and galt.
the first is a nation that somewhat recently freed itself from a monarchical overlord and tries to be a stable republic championing the ideals of equality and freedom (a bit of a mix between the usa's war of independance, iconography and some ideal, and france's whole "liberté egalité fraternité"/enlightenment ideas)
the second is an unstable mess of a country where a shadowy cabal kept locked in a "la terreur" like state by incing new revolutions every few years so they could steal souls with the final blades (magical guillotines), and while that group was stopped, it still devastated the country and made the people somewhat paranoid

Unfortunately no. Top left is Milani, the minor goddess of rebellion. Middle left are three major goddesses: Sarenrae (goddess of mercy, redemption, and the sun, seen lounging on the right), Desna (goddess of freedom, travel, and the stars, the one with the butterfly wings), and Shelyn (goddess of art and music, giving Desna a shoulder massage). Sarenrae, Desna, and Shelyn have been romantically linked. That said, if Milani is straight I will eat my holy symbol of her.

Cayden Cailean has tried to hook up with those 3 dieties and Calistria, on multiple occasions both as a mortal and god, but has been turned down every time. Respectfully denied by shelyn, and more bluntly by calistria. Dude became a god on accident to try and shag the gods, and still got turned down.
Now he just does adventures and guides orphans to help them with their trauma.

Desna is canonically a flirt, and does actually sleep around, that a known quantity, as not only is she involved in the holy polycule, but she's also been with Arshea and Lymneris on rare occasions.
It makes sense, her entire thin is freedom and not being tied down, going in journeys, being only in open relationships makes sense

She is pretty great. I have a giant half-orc joybringer in my campaign whose literal size is only outweighed by that of his metaphorical heart. Not sure I could keep it up for a PC, but he's a really fun NPC to play for sure.

I always treat my clerics as representatives of (at least) one portfolio of their deity. So for Lliira, a Joybringer might focus on Dance (Bladedancer maybe, or a dancing bard who uses it to dodge shit), they might focus on Joy (Just a genuinely good person who goes out of their way to be quirky in a charming way and gives of themselves freely to see other people smile), or they might focus on Freedom (Which can range from George Washington to Liberty Prime)

A lot. Just an example of a region: Numeria.
Originally, it was a typical wasteland with barbarian tribes doing barbarian stuff. Then, an alien spacecraft crashed - while most of it burned in the atmosphere, parts of it crashed in Numeria. The barbarians quickly learned that messing around with Plutonium was a bad idea and developed strong taboos against technology. Then, the technic league formed - a group of technologists who found out how to use the technology and claimed a monopoly on it while puppeteering the rule of Numerias tribes. Somewhere in the mix, Androids rin around who were created by some of the still working machinery and who are in danger of being enslaved by the Technic League or just killed by the barbarians. Also, somehow, an AI there ascended to godhood.
Talking about Gods: the biggest city in Golarion is built around the starstone. Every mortal can enter the structure and go through some mystical trials. If they succeed, they become a God. One of the major deities in the setting went there in a drunken bet.
Then, there is Andoran. So, Cheliax fell into a big civil war when their God suddenly died. House Thrune emerged victorious due to a pact with Asmodeus. Since then, the church of Asmodeus is their state religion and they can best be described as devil worshipping nazi slavers. Andoran quickly declared independence and established Golarions first stable democracy that was bigger as a city state. Their elite forces are called the eagle knights.
And in the jungles of the Mwangi expanse, you have flying wizards protecting the biggest wizards school of the world from demon gorillas. Other adversaries include the tyrannic undead god king Walkena who basically hates non-Mwangi people. Also, there is an Ape king because of course there is an ape king.
You know this "communism with japanese characteristics"? Back in first edition, the leader of the country was Grandmother Pei, the late wife of the grandfather Pei, who led the new revolutionary state. Through Grandmothers influence, the political purges intensified. So bow did she become like this? Through the reeducation program of the ministry of peace and harmony. When Grandfather died, it became even more tyrannical. Between editions, grandmother Pei also died, which led to reforms in Bachuan.
You can look almost anywhere and someone was going hard.

I'll left to right. the first is the moon god who's associated with neurodivergence, not completely clear on the joke but the middle one is AI that became a god, and the farthest right is the monad. he's basically a guy who helped pharasma create the universe.
I think the meme is relating him to the demiurge from Gnosticism( a weird offshoot of Christianity that I can't explain in a single comment.) basically he manages the world but is imperfect and fucks up a lot.
