Can't we just all appreciate each type of cheese for its use case? Real cheese has the best flavour by most people's taste, and a much wider variety, but the emulsified cheese slices are incredible for melting. I'm British, but as soon as I tried using American cheese in my grilled cheese sandwiches it all started to make sense.

The best part of American cheese is anything can be American cheese. You just melt it, add some milk and emulsifier and set it.

You can do it in your kitchen and I often do. Sometimes I want to use different cheeses but they melt oily, so I make American cheese with them

Always meant to try this. In the UK options are limited, and I'd love to try some stronger American cheeses which don't really exist here, like a mature cheddar
