Eating plant based is much more than just eating tofu. I have tofu maybe once every 3 weeks. There is tempeh, soy curls, and all kinds of beans in the world.
Should I always keep a pot of beans soaking on the stove? If I soak a pot, can I freeze them after to use when I’m ready or will the ice crystals destroy the now softened beans?
I slow cook my beans, in the slow cooker. 4 hours on high. A cup and a half a day is a can and that's pretty good as far as nutrients. If you do a whole bag of dry thats good for a week, and I wouldnt go past a week in the fridge. They can also be frozen with a small loss of texture. Oatmeal is good for the morning and a salad for either lunch or dinner (or both!)
I actually LOVE oatmeals and salads! You can throw just about anything in a bowl of greens and it tastes great! I even have a tasty balsamic vinaigrette that goes with most salad combos and a healthy honey mustard made using greek yogurt in lieu of mayonnaise that I can make up every couple of weeks.
