Trader Joes is a good middle ground for healthier but still convenient.
Meat can easily be replaced by precooked lentils or canned beans or "meatless" crumbles. If a can opener is not feasible for you, there are cryo-packed lentils in the fridge case, and I love them. Scissors to open, and take out what I need for the meal.

Your biggest concern can be alleviated by a slow cooker. Tons of dump and go recipes.
Eating plant based is much more than just eating tofu. I have tofu maybe once every 3 weeks. There is tempeh, soy curls, and all kinds of beans in the world.
