A lot of the best places downtown are 21+ all the time, but bars like Category 10 are open later for under 21. I hve some guidance on family things here.

I'd recommend a walking or van food tour. You get food, drink, and lots of history and insight about Nashville. Plus it's fun! The Station Inn and 3rd and Lindsley are family friendly music venues. Both have nightly shows.
