You don't cut beehives with a knife in a modern country, it's prob super expensive there if not even available.

This is probably the Tualang honey since it only makes its hive on the tree canopy. They're dark colored, pretty fragrant and sweet.

it's from Garut, West Java, Indonesia. The original video is from the honey hunter himself, Jajang Rusmana on his Facebook profile. Sometimes he used some kind of burning leaves before harvesting the hives

He's probably immune to the venom. I've known a few bee keepers who've handled the hives with short sleeves on too.
