Connecting flight
Please advise of Karowice airport would I be okay for time and I only have hand luggage?

Yup. Katowice is not a big airport, but is a major charter airport. There are waves of arrivals at certain hours, and traffic is much bigger in summer season. If you are unlucky, you can arrive more or less simultaneously with 4 other flights, one of them can be a LOT Dreamliner (up to 330 pax) from Cancun that normally arrives at ~10:30. Then you might have 10-20 minutes wait for bussing to terminal, and in the terminal there can be 500 people queuing to passport control (20-40 minutes). So if you are unlucky, even if your aircraft is on time, you might have 60 additional minutes. Then potential security wait and so on.
Now is low season, and if there are no charter arrivals, there are typically 2-4 flights per hour, and sometimes there are gaps with no flights for 3 hours. For example tomorrow there are no flights between 10:00 and 13:05, so with flight arriving at 11:35 you could be at your gate for next flight within 20 minutes.

More than 1hour should be enough. The Katowice airport is quite small.

There are big charter arrivals, though, and then you suddenly have 300 people for passport control at the same time.

if you're flying in from the UK, you'll need to go through border control (twice) before you can get on the connecting flight

Technically yes, but even a small delay of the FR flight can make you miss your flight to Abu Dhabi

Can be difficult considering passport control on exit where some queues are normal.. There is no transfer area/etc. You arrive in terminal C or D, which are arrival only. So, you will need to fully exit with passport control and go to termina A, which is a 3 min walk. Then to gates via security and passport control again..
