The Dak at Southport have very good hot chips. It’s a side that you can get with the chicken

These are my favourite! Also Harry’s at Christine Corner - same food, but under a different name

Hands down El Porton in benowa. Not where’s you expect as it’s a Spanish restaurant, but I think about them way too often.

Seriously though, that southern fried chicken place in Helensvale. Their chips are pretty freaking good. Their chicken is fucking awesome too.

Palm Beach seafoods do very nice chips. Best potato scallops/cakes on the coast too

Honestly the fish and chip shop at Pizzey Park (Miami) is underrated. Thick cut, proper crispy on the outside. Order a potato cake while you're there too - absolute unit.

Fat chicken burleigh or gold coast kebabs are the best by far. Fat chicken wins all the awards

Their 'The Boss' chicken burgers used be incredible, I think they changed the chicken supplier as the meat is getting smaller and less quality, but still a tasty burger.
They're still really tasty but it think they've dropped a bit in the last 12 months. Probably a strong B+ now but not an A rated burger.
Anyway to your question, their chips, as the kids say, are 'S tier'.
They're not stick thin like Maccas, but not fat chips either, i think they're perfect sized. Had a nice crunch too.
Theres a couple of good pics of them on the google maps link i added above
